Christmas Tree Meringues

It’s day 6 of cookie week and we need something cute & colourful!
These Christmas Tree Meringues have only 4 ingredients (5 if you include the sprinkles!) and are easy-peasy to whip up (though they do need to hang out in the oven overnight). For pretty minimal effort you get a whole bunch of whimsical little cookies that are perfect for dressing up your holiday dessert spread or making your holiday cookie boxes even cuter. Bonus: they’re gluten-free and dairy free!
What do I need to make them?
Here’s your grocery list:
-Eggs
-Icing Sugar
-Vanilla Bean Paste
-Fine Sea Salt
-Green Food Colouring (I used a mix of Americolor Leaf Green & Americolor Electric Green)
-Christmas sprinkles (try to find a mix with some stars in it to top your trees!)
You will also need a kitchen scale , a stand or handheld mixer, a spatula, a whisk, a couple baking sheets, parchment paper or perforated silicone mats, a large piping bag, and a large open star piping tip (I used a Wilton 8B)
Tips & Tricks:
-Your egg white/sugar mixture doesn’t need to get hot when it’s on the stove, just warm enough to melt the sugar. If it feels warm to the touch and you can’t feel any grittiness between your fingers after you touch the mixture, it’s ready to whip!
-Make sure you whip your mixture to stiff peaks so your trees stand tall!
-You need to use egg whites from fresh eggs for this recipe! Egg whites from a carton won’t whip stiff enough.
-Make sure all of your tools are very clean. Any trace of grease could cause your meringue not to whip properly.

Christmas Tree Meringues
These Christmas Tree Meringues have only 4 ingredients and are easy-peasy to whip up. These whimsical little cookies are perfect for dressing up your holiday dessert spread or making your holiday cookie boxes even cuter. Bonus: they’re gluten-free and dairy free!
Ingredients
- 120g Egg Whites (from about 4 large eggs)
- 230g Icing Sugar
- 1/2 tsp Fine Sea Salt
- 1 tsp Vanilla Bean Paste
- Green Gel Food Colouring
- Christmas Sprinkles
Instructions
- Preheat your oven to 250 F and line two baking sheets with parchment paper or perforated silicone mats.
- Add egg whites, icing sugar, and salt to mixer bowl and place over a pot of boiling water. Whisk constantly until the mixture is warm to the touch, but not hot.
- Place the bowl on your mixer and whip on high speed with whisk attachment until stiff peaks form. Add in vanilla bean paste and green food colouring and whisk for a few more seconds.
- Transfer meringue to a piping bag fitted with a large open star tip.
- To pipe your trees: Pipe the base of your tree by holding the piping bag straight up and down with the piping tip about 1/2" away from the baking sheet then squeeze your piping bag until you have a meringue about 1.5" in diameter. Stop squeezing. Then squeeze again holding the tip about 1/2" away from the bottom meringue to make a second meringue slightly smaller in diameter. Repeat for the top of the tree and pull up after you stop squeezing to make the top pointy. Repeat for all trees.
- Add sprinkles to your trees (if you have sprinkle stars add one to the top of each of your trees)
- Bake your trees at 250F for 20-30 minutes. You can tell if they are done by gently trying to lift the bottom of one meringue off the baking tray. If it lifts off easily, they are done. If it sticks, bake for a few more minutes and try again.
- Once they are done, leave them in the oven and turn the oven off. Leave the meringues in the oven overnight (or at least until th oven has cooled).
- You can store meringues in an airtight container at room temperature for several months. Do not refrigerate or freeze - the condensation will make them go soft.
